One of my favorite kitchen toys is my dehydrator. I’ve used it to make vegan cheese, crackers, crunchy chickpeas, and a bunch of other recipes. Around Back Friday, two friends reached out to me. One had just bought a dehydrator and was looking for recipes. The other had just bought a bunch of tofu at Costco and was looking for recipes to use it up before the expiration date. That’s how this dehydrated BBQ vegan jerky came to be!
Tofu is a frequent guest in my kitchen. Made from soybeans, tofu is rich in protein and contains all 8 essential amino acids. It’s naturally gluten-free, and a good source of calcium and iron, two essential components of a runner’s diet. Slather it in some BBQ sauce, pop in the dehydrator and ta-da! Super simple vegan tofu jerky.
I eat tofu jerky as a snack, but you can also add it to salads or throw it into soups right before serving (it’ll rehydrate if you put it in while cooking). The BBQ sauce gives it a “meaty” look and great flavor. You can cut it into squares or strips, whatever you prefer. The larger the pieces, the longer the dehydrate time. Be sure to flip the tofu half way to ensure even baking.

- 1 14 oz block of tofu *Extra firm works best
- 1/2 c BBQ sauce
Ingredients

- Remove tofu from packaging and press to remove excess water. If you do not have a tofu press, wrap the block in paper towels and set a heavy pan on top, letting it rest for 10 minutes.
- Slice the block into 16 squares. Coat each square in BBQ sauce and place on dehydrator mat.
- Dehydrate at 140F for 6 hours. Flip the tofu halfway.
I tried this recipe and I had an issue where after I dehydrated the jerky and sealed it in air tight containers it would sort of re-hydrate and the outside would get sticky. Do you have a way to keep that from happening?
Can I bake this? I have seen a baking option for making jerky with soy curls. Alas, I do not have a dehydrator!

Yes you should be able to, although I have never tried. I recommend trying it on the lowest oven setting and checking every 45 minutes or so until you get it to the texture you want. Let me know how it goes!
