It’s my favorite time of year because the farmer’s markets are loaded with ripe berries, bright green zucchini, juicy watermelon and sweet-smelling basil. Best time to be a vegan or try out some new vegan recipes! These 5 vegan summer recipes are the perfect addition to your summer meal planning. Chard and Mushroom Tofu Scramble
Chard is a dark leafy green with crinkly leaves and a thicker stem. Rainbow chard has bright red, yellow or purple stalks, while Swiss chard does not (however there’s no difference in taste). One cup of cooked chard has 35 calories and 3 grams of protein. Plus, chard is a great source of vitamins A, C and K as well as potassium, iron and magnesium (source). Pairing the vitamin K from the chard and the vitamin D from the mushrooms help the body absorb the calcium from the tofu. Perfect breakfast recipe to eat while marathon training in the summer! Vegan Watermelon and Feta Salad
This vegan watermelon and feta salad screams summer. Watermelon is in season from May to September, and it’s my favorite juicy summer fruit. Watermelon is naturally hydrating and a great source of lycopene, which lowers the risk of cardiovascular disease and cancer (source). Fig Arugula Vegan Pizza
Figs come to season once in early June and then again August through October. Figs are an excellent source of potassium and fiber, two important components of an athlete’s diet. One of the easiest vegan summer recipes to make, raspberry basil sorbet is perfect for hot and humid nights. Both berries and basil come into season in mid-summer.
