Vegan Super Bowl Recipes

The Super Bowl is one of my favorite sporting events.  Yes, I love to watch football, but I use the Super Bowl more of an excuse to get together with friends and share food.  A good Super Bowl spread is as important as the game.  Especially since I am a Bears fan and… well, look where that’s gotten me.  Here are a 8 of my favorite vegan Super Bowl recipes to prepare for game day. Jackfruit Chili

Perhaps the king of all Super Bowl dishes is a good chili.  This vegan jackfruit chili is loaded with beans, chunky tomatoes, and of course jackfruit.  It’s thick and hearty.  Shredded jackfruit is a healthier replacement for meat that still has that shredded meaty look.  No one will tell that this chili is vegan!  Get the recipe here.

Mexican Quinoa Salad

I love bringing this salad to parties.  It’s a mix of beans, grains, mango and avocado.  I go home with an empty bowl – the best way to leave in my opinion! Get the recipe here. 

 

Italian Pasta Salad

Not a quinoa and black beans fan? Is Italian food more your jam?  This is a protein-packed Italian pasta salad that uses lentil pasta for protein and a tangy, oil-free dressing for flavor.  Super easy, Super Bowl.  Get the recipe here. 

 

 

BBQ Jackfruit Sliders

BBQ is a staple at Super Bowl parties.  Grab your favorite vegan BBQ sauce (or the recipe provides a homemade version), a can of jackfruit and boom.  Warm, saucy goodness. The original recipe calls for large sandwiches, but you can easily plate these recipes on mini slider buns.  Get the recipe here. 

 




 

Lemon Garlic Hummus

Hummus is a classic vegan Super Bowl recipe.  This recipe uses chickpeas, tahini, lemon and garlic.  Add a pinch of salt or red pepper flakes for some heat and that’s all.  It’s a great vegan Super Bowl recipe for when I am feeling lazy or time-crunched.  Get the recipe here.

2-Ingredient Truffles

Speaking of super simple and easy, these vegan 2-ingredient truffles are the easiest dessert you can bring to a Super Bowl party.  Literally two-ingredients: dates and cacao.  If you want to get fancy you can roll them in crushed nuts or freeze-dried raspberries if you want to get all fancy.  Or just keep it simple.  I’m sensing a theme.  Get the recipe here.

I haven’t tried jackfruit, but I know I need to! I thought the best way would be to start with it in my smoothies. Who are you cheering for?
