Round-up: Easy Vegan Fall Recipes

When I think of fall, I think of warm, comforting recipes.  These 5 easy vegan fall recipes use seasonal produce and rich, earthy spices.  They’re full of protein, and essential vitamins and minerals to keep you healthy and satisfied all season long.  You can make many of these recipes for a vegan Thanksgiving or Friendsgiving holiday gathering too!

 

Vegan Jackfruit Chili

One of my favorite vegan fall recipes is chili.  This recipe for vegan jackfruit chili is savory, spicy and easy to make.  Black beans and kidney beans provide a hefty dose of protein and iron, while jackfruit bumps up the vitamin C.  It’s a perfect one-pot vegan meal to make this fall.

Curried Pumpkin Wild Rice Soup

Looking for a twist on a traditional pumpkin spice recipe?  Curried pumpkin wild rice soup is a savory alternative to sweet pumpkin recipes.   It’s rich in protein, iron, and vitamin A.  Perfect vegan recipe for a chilly fall or snowy winter day.

 

Sweet Potato Protein Waffles

Have a ton of leftover sweet potatoes from Thanksgiving?  Make these sweet potato protein waffles! Sweet potatoes are a complex carb that is rich in Vitamins A. The waffle recipe uses tofu for an extra dose of plant-based protein.

 

Savory Butternut Squash Waffles

If you prefer savory breakfasts, you’ve got to try these vegan roasted butternut squash waffles! They use garam masala for a comforting fall spice.  So good you can even eat them as breakfast for dinner!

One of my very first recipes posted, but a vegan fall classic.  Quinoa, kale, and tempeh stuffed acorn squash. Earthy and nutty roasted acorn squash pairs with iron-rich quinoa and protein-rich tempeh.  One of my favorite fall recipes.

 

Spaghetti Squash Pasta

Another easy vegan fall recipe that features squash.  Spaghetti squash pulls apart into little strands that resembles pasta when cooked.  Spaghetti squash pasta is a healthy gluten-free pasta alternative.

 

Easy Roasted Vegetables with Maple Tahini Dressing

Root vegetables are good sources of vitamins and antioxidants.  This recipes pairs roasted rainbow carrots, brussels sprouts and beets combine with a sweet maple tahini dressing.  It’s always a hit at the Thanksgiving dinner table!

Pumpkin Brownies

Another way to add pumpkin to recipes is to make pumpkin black bean brownies.  These are fudgy and dense brownies that just require a food processor to mix!

 

Granola Stuffed Baked Apples

Baked apples are one of the easiest vegan fall recipes on the blog.  Bonus for making my kitchen smell amazing.  Stuff them with vegan yogurt and granola for a lazy morning brunch or healthy dessert.

 

Chocolate Pecan Pie

One of my favorite holiday dishes is chocolate pecan pie.  Decadent and rich, every holiday guest regardless of nutrition preference will enjoy.  Decorating the top with pecans is a show stopper.

I haven’t made soup in the longest time but that curried pumpkin soup sounds amazing! I want that pumpkin cornbread in my life too! *-*
