Easy Homemade Vegan Ice Cream

But most importantly…

IT’S ICE CREAM SEASON!

When I wasn’t vegan, I ate ice cream prooooobably everyday, sometimes twice a day.  Freshman year of college the dining hall, Frank’s, was across the sidewalk- I could literally crawl there if I wanted to… some Saturday and Sunday mornings I would actually crawl, based on how the drinking was the night before, but I digress.  The BEST part of Frank’s though (besides it’s proximity on a hungover morning), was that it had an ice cream parlor in the basement AND UW-Madison makes their OWN ICE CREAM from the cows there are on campus (#SoWisconsin) AND it was open late.

So basically, a typical evening in college would go like this:

Someone (most likely Kathleen or Sarah) yelling down the hall: I’m going to Franks, anyone wanna join?

Me: Is there ice cream involved?

Them: … there can be?

Me:

You’re probably saying, “Hey Becca, I’m preeeeeeeetty sure that ice cream isn’t vegan, what with the milk and all.” And I am going to say you’re right, but my love for ice cream still burns strong.

 

My solution:

 

HOMEMADE VEGAN ICE CREAM

It’s honestly the simplest thing you can make because there is only 1 core ingredient:

 

Only one ingredient!

 

 

Seriously, all you need is a frozen banana.   So when the bananas on your counter start to go brown, pop them into the freezer and you’re ready to make vegan ice cream.  From there the possibilities are ENDLESS!  Just mix in whatever else you want!

You want vegan chocolate ice cream? Bananas + cocoa powder!

You want vegan cookie dough ice cream?  Bananas + my vegan cookie dough bites!

You want vegan strawberry ice cream? Bananas + frozen strawberries!

You want vegan chocolate peanut butter ice cream?  Bananas + cocoa powder + peanut butter!

It’s laughable how easy it is to customize!  My personal favorite is peanut butter chocolate with granola, pretzels, popcorn, chocolate chips and frozen berries mixed in, but to each his own.

 

You don’t even need an ice cream maker for this, you can just use a blender or (ideally) a food processor.  So the second a craving for ice cream hits, you can have some instead of having to wait.

Start with a frozen banana, broken into chunks, a tablespoon of cocoa powder, and a tablespoon of peanut butter.

Pulse it in the food processor until smooth.

 

After a few pulses
After a few pulses
Keep pulsing until it becomes thick and creamy
Keep pulsing until it becomes thick and creamy

And then eat!

It’s honestly that simple. Keep it simple, stupid.  Feel free to mix in anything you want- the more the merrier:

Try popcorn for a salty sweet combo:

Popcorn + ice cream = amazeballs
Popcorn + ice cream = amazeballs

 

Or the classic chocolate chip addition:

Add some chocolate chips
Yum

Peanut Butter Chocolate Vegan Ice Cream

Makes: 1 serving (~ 1/4 cup) Total time: 5 minutes
Ingredients
  • 1 frozen banana, broken into chunks
  • 1 TBSP peanut butter
  • 1 TBSP cocoa powder

Mix-Ins

(all optional, but highly recommended if you want bomb-ass ice cream… the ultimate concoction is adding all of them at once.  You’re welcome.)

  • Carob chips
  • Granola
  • Fresh/frozen fruit
  • Popcorn
  • Pretzels

Directions:
  1. Place banana, peanut butter and cocoa in a food processor and pulse until you reach a thick creamy consistency.
  2. Stir in any mix-ins.
  3. Try not to eat it too fast… 🙂
