Long-Run Lemon Coconut Energy Bites

Long-run lemon coconut energy bites are made with real food to fuel long runs and endurance workouts. They’re full of potassium, carbohydrates and immune boosting antioxidants.  Fuel your workouts with lemon coconut energy bites to get a clean, non-processed source of energy.  

 

 

 

 

My most popular recipe to date has been the long-run cherry energy bites.  Readers, friends, athletes all raved about how they’ve used them as healthy snacks or fuel for endurance events.  I received so much positive feedback and love for the recipe!  One friend uses them as healthy snacks during her teaching day, another used them as fuel for his Silver Rush 50 mile race (at an elevation of over 10,000 ft!), and I’ve even had other athletes reach out to me via Instagram to show me how they’ve used the energy bites and how they’ve liked them.

 

 

Each time someone reached out to me, my heart filled with joy and gratitude. All that positive karma made me want to continue finding real food options for athletes.  That’s how these lemon coconut energy bites came to be.  I’ve gone on long runs with them for the last few weeks in order to make sure they worked.  I felt fueled and energized through a 25 and 20 mile run this week, the bites were great!  A great burst of energy and refreshing lemony flavor.

 

 

 

For this recipe, I partnered with Karma Nuts because we share the same mission: bringing great tasting, high quality, nutritious food into the world.  I wanted to create a healthy option for athletes to fuel their runs or long rides, but these lemon coconut energy bites aren’t just for athletes!  They make a great snack or even a satisfying dessert!  Just like Karma’s slogan, I wanted to do good (create the recipe), to enable people to eat good and feel good during their endurance events.

 

 

 

I chose great-tasting and beneficial ingredients for the recipe.  Lemon peel is full of vitamin C and terpenes, a compound of antioxidants that protect immunity and DNA.  Research shows that moderate exercise can boost immunity which is great, however acute intense exercise can actually suppress the immune system.  Think marathons, ultra marathons, and other endurance races.  Adding lemon to these energy bites can help protect against that.

 

 

Cashews have high levels of magnesium which protects against muscle spasms, soreness and fatigue. PERFECT for the middle of a long workout or ultra marathon.  Cashews are also a good source of iron, an important factor in transporting oxygen around the body.  I used the raw cashews from Karma Nuts, but their coconut wrapped cashews work well too.

Like I mentioned in previous date-based recipes, dates provide tons of potassium, an essential electrolyte for runners.  Dates and the oats also provide easy-to-digest carbohydrates and sugar for energy.  Put all these ingredients together and you have a tasty lemon coconut energy bite that is perfect running fuel for long runs. I always advocate fueling with real food when possible.  According to MyFItnessPal, one bite has 100 calories, 18 grams of carbohydrates, 90mg of potassium, 64mg of sodium, 4g of fat and 2g of protein.

 



 

Long-run Lemon Coconut Energy Bites

 

In order to encourage people to try out my recipes, I aim to make them with minimal ingredients and minimal time.  Long-Run Lemon Coconut Energy Bites contain 6 ingredients and take 5 minutes to make.  No baking needed.

 

 

First, grate a large lemon to get about 2 TBSP of lemon zest. *Pro tip: If you don’t have a grater (or if you don’t get a lot of zest by using it), take a small knife and slice off thin pieces of the peel, avoiding the bitter white part.  Finely mince the peel.

 

 

 

 

Then, combine the pitted dates, oats, cashews, coconut, lemon zest, and juice from the lemon (about 2-3 TBSP worth) in a food processor.  Pulse 4-5 times to break up the nuts and dates and then process on high until a ball of dough forms.

 

After pulsing. Needs about 1-2 minutes more on high to form dough

 

 

Scoop out ~1 TBSP worth of dough, roll into a ball, and eat store in an air-tight container for up to 3 weeks in the refrigerator or 6 months in the freezer.  *Optional: roll the balls in coconut for an extra layer of sweetness.

Long-run lemon coconut energy bites are great fuel for on-the-go. Naturally sweetened, high in potassium and Vitamin C, these energy bites make great running fuel, a healthy snack, or quick breakfast.

  • 12 pitted Medjool Dates
  • 1 lemon, plus zest
  • 2/3 c cashews
  • 1 1/3 c oats
  • 1/3 c dried unsweetened shredded coconut *plus more for rolling
  • 1/2 tsp salt

Instructions
  1. In a small bowl, zest the lemon (about 2 TBSP worth).
  2. In a food processor combine pitted dates, cashews, oats, dried coconut, salt, lemon zest and juice from 1 lemon. Pulse 4-5 times to break up the nuts and dates and then process on high for 5 minutes until a ball of dough forms.
  3. Roll about 1 TBSP worth of dough into a ball. *Optional, roll in extra shredded coconut for a layer of sweetness.
  4. Store in an air-tight container in the refrigerator for up to 3 weeks or freeze for up to 6 months.
