It’s Marathon Monday, my favorite day of the year! While I am not running the Boston Marathon this year, I am heading out to the course shortly to cheer. However, it’s pouring rain, barely above freezing, and I woke up with a terrible head cold. NO! My race is on Saturday, I can’t get sick!
I immediately blended this immune boosting mango smoothie for breakfast. The key produce ingredients are mangos, clementines, carrots, and spices like ginger, cinnamon and turmeric. Mangoes and clementines are loaded with vitamin C. Use fresh or frozen produce – frozen will make it thicker. Vitamin C acts as an antioxidant that can reduce the duration and intensity of colds if you already have symptoms (source). Mangoes and carrots contain carotenoids. These convert to vitamin A, another antioxidant that can protect the immune system (source). Finally, ginger, turmeric and cinnamon all provide anti-inflammatory benefits. For a long time these spices have been used as natural cold-fighting remedies.
Just add all the ingredients to a high-speed blender and let it run until thick and smooth. A simple, delicious, 5-minute vegan breakfast recipe. - 1/2 c fresh or frozen mango chunks
- 2 clementines, peeled
- 1 large carrot
- 1/4 banana, peeled
- 3/4 c unsweetened almond milk *or other liquid of choice (water, orange juice)
- 1 tsp ground ginger
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon

- Combine all ingredients in a blender and blend on high until smooth.
I kind of feel like I’ve been fighting off something, and was planning to look around for some sort of cold busting smoothie so I tried this. 🙂 I really enjoyed it! I won’t lie, I would’ve liked it a little sweeter (a date would have done the trick) but I also know sugar, even natural sugar, isn’t the best thing. I used a sumo orange instead of the clementines, btw (even though I have clementines).
